Ingredients

Macerated Strawberries

  • Very ripe strawberries, chopped - 75g

  • Sugar - 2 cups

  • Vodka - 1.5oz

Ice Cream Base

  • Heavy cream - 400g

  • Whole milk - 200g

  • Egg yolks - 6

  • Sugar - 50g

  • Powdered sugar - 50g

  • salt

  • Macerated Strawberries

Cooking Instructions

Getting started:

Macerated Strawberries:

  1. Add 150g of fresh, cleaned strawberries to a bowl

  2. Cover with 2 cups of sugar. The strawberries should start to react to the sugar and release their liquid

  3. Place it in the fridge for at least an hour, it can sit over night.

  4. Place 75g strawberries into a small container

Vodka Strawberries:

  1. Place half of the strawberries (75g) into a small container

  2. Add 1 shot of vodka.

  3. Cover and let sit for 24hrs

Putting in the work:

Strawberry Syrup

  1. Add the remaining half of strawberries (75g) to a saucepan

  2. Cook over medium-low heat for 8-12mins

  3. Stir occasionally, strawberries should start breaking down and becoming syrupy like

  4. Bring syrup temp to 185 degrees

  5. Remove from heat and let it cool

Ice Cream Base

  1. In a large pot, combine all of your ingredients, heavy cream, milk, sugars, and salt

  2. Turn the heat on low, do not allow the milk to boil or even become hot

  3. While the pot is slowly building heat, separate 6 egg yolks, and place them in a pan. Discard the egg whites.

  4. Slowly mix-in the eggs into the warm milk, tempering them. -Basically, never stop whisking

  5. Add your vodka strawberries into the mixture

  6. If you desire a red ice cream to mirror a cherry, add food coloring, we generally leave it out.

  7. Raise the burner to a medium-low heat. Allowing your mixture to reach a 165 degrees.

  8. Immediately cool, we tend to just throw it in the fridge. If you care about your fridge, you can give the mixture an ice bath rather than working your fridge extra.

  9. Fill your Ninja Creami Pints, this recipe should fill 2.

Last mile:

  1. Freeze your ice cream for 24hrs

  2. Get out our Ninja Creami and 1 pint of ice cream, let the ice cream sit out for 5-10mins for best results

  3. Run it on ice cream mode

  4. Add your Macerated strawberries, and rerun the mix-in option and serve

  5. Please note, each pint of ice cream is approximately 3K in calories... We tend to enjoy one pint over an extended period of time.
