20 - Cheruby cherry tomatoes
3 tbsp - of red onion
1/2 - jalapeno pepper
1/2 - lime
1 tbsp - olive oil
1 tbsp - sherry vinegar
7-10 - fresh cilantro leaves
1 tsp - agave
1 tsp - salt
Steak Marinade
1/2 - orange juiced (squeezed)
1 - lime juiced (squeezed)
1/4 - cup olive oil
1/4 - cup agave
3 tbsp - garlic
1/4 tsp - salt
1 tsp - black pepper
2 tbsp - Any taco seasoning
Steak Pressure-Cooker
Steak Marinade
1/4 cup or cover top of meat - taco seasoning
1 tsp - Paprika
1 tsp - Cumin
1 tsp - Garlic
1/2 tsp - salt
Rice
2 - cups water
1/4 tsp - of salt
1/4 tbsp - butter or oil
1/4 - lime juiced (squeezed)
1/4 - lemon juiced (squeezed)
7-10 - fresh cilantro leaves
Guacamole
2 - Avocados
1/2 oz - lime
1/2 tsp - salt (adjust to your flavor)
1 tsp - pepper (adjust to your flavor)
2 tsp - garlic
1 tbsp - chopped red onion
Cooking Instructions
Getting started:
Get out your ingredients for the steak marinade and a container it can site in sealed over night. We use a large ziplock bag.
Combine all of the ingredients, orange, lime, oil, agave, garlic, salt, pepper, and extra taco seasoning
Mix your marinade and meat in the container and store for at least 24hrs.
Putting in the work:
Steak
Take out your steak marinade and place the contents into the pressure cooker.
Add the additional taco seasoning, paprika, cumin, garlic, and salt.
Your pressure cooker should have a beef option, it should typically take about 30-40mins.
Once done, it should slow-release for an additional 10mins
Rice
While that is going, take out your rice and wash it. Wash until clear or run through a strainer for some time
Add 1 & 1/3 cups water to 1 cup of rice.
Add your additional seasonings, salt, lemon, lime into the ricer cooker. Save the cilantro for once the rice completes
There should be a white rice option on the rice cooker, it usually takes about 15mins
Fluff your rice once it completes
Salsa
Next, let's make the salsa. Throw all of your salsa ingredients into a food processor and mix until finely chopped. If you do not have food processor, find the sharpest knife in the house and get cutting. You will need to chop your tomatoes, onion, peppers, and cilantro
Remove the contents from the food processor and mix in your oil, lime, vinegar, agave, and salt.
Add additional salt and vinegar to flavor
Guacamole
Get out another mixing bowl, add all of your ingredients, lime, salt pepper, onion garlic.
Mix thoroughly and additional salt to flavor
It typically has enough pepper when you can start to see pepper chunks in the guac.
Last mile:
Pop-off the lid to your pressure. Take the meat out of the pressure cooker and break it apart in a separate storage container.
Pour over the pressure cooker liquid onto the storage container until full, discard the rest
Warm your tortillas, or shells of choice, and add in your favorite toppings.
For a tip, we generally get green cabbage over lettuce. It gives a nice crunch and lasts longer!
